What's the secret ingredient? It's Salsa!
Chunky salsa provides the tomatoes, onion, garlic, peppers, and spices in this easy, health recipe.
Ingredients:
1 can black beans, undrained
1 medium sweet potato, peeled and cut into small chunks
1 cup vegetable broth or water
1 16 oz. jar chunky salsa
1 teaspoon chili powder (or to taste)
1 teaspoon cumin (or to taste)
Add all ingredients to saucepan over high heat and bring to a boil. Lower temperature to medium or medium/high and cover. Simmer for 25-30 minutes until potatoes are tender. Makes 4 servings.
Per serving: 180 calories, 32 grams carbohydrate, 1 gram fat, 8 grams protein.
